I use the Ubuntu supplied Gnome for GUI on all three machines.
I have a Minis Forum MS-01 with a 13th Gen Intel(R) Core™ i9-13900H (20) @ 5.40 GHz CPU, 96 GB RAM, 2 NVME drives for a combined 3 TB of storage. I generally avoid using SNAP (preferring Flatpack and Apt for installations). This is my daily driver that I use for programming and 3D modelling (Blender).
I also have a Dell Latitude running (11th Gen Intel(R) Core™ i7-1185G7 (8) @ 4.80 GHz, 16 GB of RAM, 250 GB NVME) (for general use when I’m in my home office).
And a Dell XPS running (13th Gen Intel(R) Core™ i7-1360P (16) @ 5.00 GHz, 32 GB RAM, and 2 TB NVME on a Dell dock (main use is DAW work).

The MS-01 has been an awesome machine (and has been running Linux since the day I got it). It’s small, flexible and way more powerful than my desktop system. I’m running two NVME drives for 3TB and still have two open slots for more NVME. Only downside (short of going with an external GPU) is I can only support a single slot, short half height card. Currently occupied by a 1050 Ti. It’s a great little beast of a computer.
